Nigerian fried rice and how it differs from jollof

Nigerian fried rice is rice cooked with vegetables and seasoning, then fried. How it compares with jollof and what’s in ours.

Nigerian fried rice sits next to jollof on most Nigerian party tables. It’s one of the rice dishes on our menu.

What it is

Nigerian fried rice is rice cooked in a seasoned stock, often with curry powder and thyme, until almost done, then stir-fried with chopped vegetables. It’s yellow-gold rather than red, and the vegetables stay bright.

The vegetables usually include carrots, peas, green beans and sweetcorn. Some cooks add liver, prawns or other meat.

How it differs from jollof

  • Jollof is cooked in a tomato and pepper base. Fried rice has no tomato base.
  • Jollof is red-orange. Fried rice is yellow with coloured vegetables through it.
  • Jollof is soft and saucy. Fried rice is drier, with separate grains.

It’s also a little different from Chinese fried rice, because of the curry powder and thyme.
