Peppered chicken gizzard is a Nigerian party favourite, and dodo gizzard mixes it with fried plantain. Here’s what they are.
Chicken gizzard doesn’t feature much in British cooking, but in Nigeria it’s a favourite snack. We have several gizzard dishes on our menu.
What gizzard is
The gizzard is part of a chicken’s stomach. It’s a small, firm muscle, a bit chewy, with a rich meaty taste. It needs to be cooked slowly first, to make it tender, then it can be fried or grilled.
Peppered gizzard
For peppered gizzard, the gizzards are boiled with seasoning until tender, fried until crisp outside, and then tossed in a sauce of peppers and onions. It’s a common part of Nigerian small chops.
Dodo gizzard
Dodo gizzard, sometimes called gizdodo, mixes peppered gizzard with fried ripe plantain (dodo) in the same pepper sauce. The sweet plantain and the spicy, savoury gizzard work well together. It became popular at Nigerian parties and is now served at many Nigerian restaurants.
