Nigerian pepper soup: goat, catfish and tilapia

Pepper soup is a light, hot broth made with a special spice mix. Here’s what’s in it and the three kinds we cook.

Pepper soup is different from the other soups on our menu. It’s thin, not thick, and you eat it on its own with a spoon, not with a swallow.

What it is

Pepper soup is a clear, spicy broth. The meat or fish is cooked in water with hot peppers, onions and a pepper soup spice mix, until it’s tender and the broth is full of flavour.

The spice mix

Pepper soup gets its taste from a blend of West African spices. Recipes differ, but the mix often includes calabash nutmeg (ehuru), alligator pepper and grains of selim (uda), along with chilli. Some cooks add scent leaf or uziza leaves at the end. The result is hot, fragrant and slightly bitter.

Catfish pepper soup is sometimes called “point and kill” in Nigeria, because customers at some bars point at the live fish they want.

How hot is it?

Pepper soup is meant to be hot. If you’d like it milder, tell us when you order.

When people eat it

In Nigeria, pepper soup is popular in the evening with a cold drink, and many people eat it when they have a cold.
